A Different Kind of Easter

Happy Easter to all those celebrating.

We didn’t do an Easter egg hunt this year. Instead, we made our own Easter eggs at home, which felt like a better fit for where he is right now.

We used a recipe I found online:

½ cup almond butter

1 cup almond flour

pinch of salt

1 tbsp maple syrup or honey (optional)

1 tsp vanilla extract (optional)

Mix everything together, shape into small eggs, and place in the freezer for about 20 minutes. After that, coat them in chocolate and return to the freezer for another 15 minutes.

A was involved the whole time. Mixing, touching, and of course finishing what was left in the bowl. He stayed with it from start to finish.

He later had a couple as part of his snack, so I’d say they were a success and probably will be making them again next year.
